Refreshing and delicious, this salsa is so versatile.
It is wonderful served with flax crackers or paired with fish tacos.
The honey or ataulfo mangos are particularly good in this dish when they are in season.
- 2 c diced mangos
- 1/4 c diced red onion
- 1/2 c diced red bell pepper
- 1 T thin sliced serrano pepper (seeded and deveined for less heat)
- 1 c diced avocado
- 1-2 T fresh lime juice to taste
- 1/4 to 1/2 t sea salt to taste
Toss all ingredients gently in a bowl. Let rest for 15min.
Adjust salt and lime.
Add avocado seeds to keep from oxidizing.
