There is a significant difference in flavor when organic ingredients are used.
This soup just gets better with age.
If the onions are added too soon the soup becomes very sweet.
More onions, garlic, ginger and spices may be added for additional healing properties.
- 1 head cauliflower sliced into 1” pieces
- 1 bunch of collards deveined and cut into 1” pieces
- 2 large carrots cut into large rounds
- 4 ribs of celery cut into 1/2” pieces
- 1/4 c diced ginger
- 2 T sliced garlic
- 1 c julienne onions
- 1 c red lentils
- 1 12oz can tomatoes
- 1 12 oz can coconut milk
- 1/4 c turmeric
- 1T cumin
- 2 t sea salt
- 1/4 t crushed red pepper
- 2 bay leaves
- 1 gallon of water
- chopped avocado
Bring lentils, collards and spices to a boil. stirring occasionally so lentils don’t stick.
Simmer for 15 min.
Add remaining except onions and coconut milk and simmer for 25 min.
Add onions and coconut milk and simmer additional 10 min.
Season to taste.
Garnish with chopped avocado.
